Rasmalai recipe with milk powder By Food Fusion
Rasmalai is a cherished South Asian dessert featuring soft cheese dumplings soaked in sweet, flavored milk. Food Fusion offers a convenient recipe using milk powder, simplifying the traditional method.
**Ingredients:**
*For the Rasmalai Balls:*
- 1 cup full-fat milk powder
- 1 teaspoon all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon ghee (clarified butter)
- 1 large egg
*For the Milk Syrup:*
- 1 liter full-fat milk
- 1 cup sugar (adjust to taste)
- 4-5 green cardamom pods, crushed
- A few strands of saffron (optional)
- Chopped pistachios and almonds for garnish
**Instructions:**
1. **Prepare the Milk Syrup:**
- In a wide, heavy-bottomed pan, combine the milk, sugar, crushed cardamom pods, and saffron strands (if using).
- Bring the mixture to a boil over medium heat, then reduce to a simmer.
- Allow it to simmer gently while you prepare the Rasmalai balls.
2. **Prepare the Rasmalai Balls:**
- In a mixing bowl, combine the milk powder, all-purpose flour, and baking powder.
- Add the ghee and mix until the mixture resembles coarse crumbs.
- Beat the egg separately and gradually add it to the dry mixture, mixing gently to form a soft dough.
- Divide the dough into small portions and shape them into smooth, crack-free balls, then flatten them slightly to form discs.
3. **Cook the Rasmalai Balls:**
- Gently add the prepared discs into the simmering milk syrup.
- Cover the pan and let them cook on low heat for about 10-15 minutes. The discs will expand as they absorb the milk.
- After cooking, remove the pan from heat and allow it to cool to room temperature.
4. **Chill and Serve:**
- Once cooled, refrigerate the Rasmalai for at least 2-3 hours to allow the flavors to meld.
- Before serving, garnish with chopped pistachios and almonds.
