RESTAURANT STYLE CHICKEN GRAVY BONELESS CHICKEN GRAVY RECIPE
Here’s a recipe for **Restaurant-Style Boneless Chicken Gravy** that will give you the rich, flavorful experience you enjoy at your favorite eateries.

### **Ingredients:**
#### For the Chicken:
- Boneless chicken: 500 g (cut into small pieces)
- Yogurt: 1/2 cup
- Ginger-garlic paste: 1 tbsp
- Turmeric powder: 1/4 tsp
- Red chili powder: 1 tsp
- Lemon juice: 1 tbsp
- Salt: to taste
#### For the Gravy:
- Oil/butter/ghee: 3 tbsp
- Onion: 2 medium, finely chopped
- Tomatoes: 3 large, pureed
- Cashews: 8-10 (soaked in warm water and blended into a paste)
- Ginger-garlic paste: 1 tbsp
- Green chilies: 2, slit
- Red chili powder: 1 tsp
- Coriander powder: 1 tsp
- Turmeric powder: 1/4 tsp
- Garam masala powder: 1/2 tsp
- Kasuri methi (dried fenugreek leaves): 1 tsp (crushed)
- Fresh cream: 3-4 tbsp
- Water: as required
- Fresh coriander leaves: for garnish

### **Instructions:**
#### **Step 1: Marinate the Chicken**
1. In a bowl, mix yogurt, ginger-garlic paste, turmeric, red chili powder, lemon juice, and salt.
2. Add the chicken pieces, coat well, and marinate for 30 minutes to 1 hour.
#### **Step 2: Cook the Chicken**
1. Heat 2 tbsp oil in a pan. Add the marinated chicken and cook until golden brown and fully cooked. Set aside.
#### **Step 3: Prepare the Gravy**
1. In the same pan, add the remaining oil or butter.
2. Sauté the chopped onions until golden brown.
3. Add ginger-garlic paste and green chilies; cook for 1-2 minutes.
4. Stir in the cashew paste and cook for 2 minutes.
5. Add the tomato puree and cook until the oil starts separating from the masala.
#### **Step 4: Spice It Up**
1. Add red chili powder, turmeric, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
2. Pour in 1 cup of water (adjust for desired consistency) and let it simmer for 5 minutes.
#### **Step 5: Combine Chicken and Gravy**
1. Add the cooked chicken pieces to the gravy and mix gently.
2. Sprinkle garam masala and crushed kasuri methi. Stir and let it simmer for another 3-4 minutes.
#### **Step 6: Add the Final Touch**
1. Stir in fresh cream for a rich texture and taste.
2. Garnish with fresh coriander leaves.
