DARK Chocolate Liqueur
1 C Water
1 ¼ C Sugar
¾ C Unsweetened Ground Cocoa
1 tsp Vanilla Extract
½ tsp Espresso Powder
1/8 tsp salt
2 C Brandy

Process:
In medium saucepan combine water, sugar, cocoa, vanilla, espresso powder, and salt to a boil. Stir to avoid clumping. Allow to boil for 1 to 2 minutes, then remove from heat and allow to cool to room temperature. It is acceptable to accelerate the cooling process with refrigeration.
Once cooled add to a holding bottle and then add the brandy, seal and shake.
Ready to consume immediately.

MILK Chocolate variation
14 oz Sweetened Condensed Milk
1 C Half and Half

Process:
Follow the same syrup making process and after cooling take the following steps:
In a blender combine the condensed milk and brandy and blend for about 10 seconds.
Next add the half & half and 1 cup of syrup, and blend until combined. Finally, add all remaining syrup and blend until combined. Transfer to bottle and refrigerate for up to 60 days. Can be consumed immediately.
