### Ingredients:
- **Mutton (bone-in or boneless)**: 1 kg
- **Basmati rice**: 2 cups
- **Onion**: 2 large, thinly sliced
- **Tomatoes**: 2 medium, chopped
- **Ginger garlic paste**: 1 tablespoon
- **Green chilies**: 4-5, slit
- **Yogurt**: ½ cup
- **Coriander powder**: 1 teaspoon
- **Cumin powder**: 1 teaspoon
- **Cinnamon stick**: 1-inch piece
- **Cloves**: 4-5
- **Black cardamom**: 1
- **Green cardamom**: 2-3
- **Bay leaves**: 2
- **Black peppercorns**: 6-7
- **Nutmeg powder**: ½ teaspoon
- **Salt**: to taste
- **Water**: 4 cups
- **Oil or ghee**: 3-4 tablespoons
- **Fresh coriander leaves**: for garnish
### Instructions:
1. **Preparation of Mutton**:
- In a large pot, heat 2 tablespoons of oil or ghee. Add the mutton and brown it on all sides. Remove and set aside.
2. **Fry the Onions**:
- In the same pot, add more oil or ghee if necessary. Add the thinly sliced onions and fry them until golden brown. This step is crucial to give the pulao a rich color and taste. Once browned, remove half of the onions and set them aside for garnishing.
3. **Cooking the Mutton**:
- To the pot with the remaining onions, add the ginger garlic paste, bay leaves, black cardamom, green cardamom, cinnamon, cloves, black peppercorns, and sauté for a minute.
- Add the chopped tomatoes, coriander powder, cumin powder, and cook until the tomatoes soften.
- Now, add the browned mutton back into the pot. Stir well to coat the mutton with the spices and cook for 5 minutes.
4. **Yogurt and Water**:
- Add the yogurt and mix well. Cook for a couple of minutes, then pour in 4 cups of water (adjust based on your rice's absorbency). Add salt to taste.
- Bring the mixture to a boil, then reduce the heat and simmer until the mutton is tender. This can take about 40-45 minutes.
5. **Rice Cooking**:
- While the mutton is cooking, wash the basmati rice thoroughly and soak them for 30 minutes. Drain the rice before adding them to the pot.
- Once the mutton is cooked, add the soaked rice and mix gently. Add more water if necessary (around 1.5-2 cups depending on rice quality).
- Cook on a low flame until the rice is fully cooked and the water is absorbed. It will take around 15-20 minutes. Keep the lid tightly closed for the best results.
6. **Finishing Touches**:
- Once the rice is cooked, gently fluff the pulao with a fork. Garnish with the reserved fried onions and fresh coriander leaves.
7. **Serve**:
- Serve hot with raita or a simple salad.
