1. Classic Basque Burnt Cheesecake
Ingredients:
500 g (2 cups) cream cheese, room temperature
200 g (1 cup) sugar
4 large eggs
250 ml (1 cup) heavy cream
15 g (1 tbsp) all-purpose flour
1 tsp vanilla extract
A pinch of salt
Steps:
1. Preheat Oven: Preheat to 200°C (400°F). Line a 9-inch springform pan with parchment paper, leaving excess paper for a rustic look.
2. Mix Cream Cheese & Sugar: Beat cream cheese and sugar until smooth.
3. Add Eggs: Add eggs one at a time, beating until fully incorporated.
4. Add Cream, Flour & Flavor: Add heavy cream, vanilla, salt, and sift in flour. Mix until smooth.
5. Pour & Bake: Pour the batter into the pan and bake for 50-60 minutes until the top is dark brown, but the center jiggles slightly.
6. Cool: Let it cool at room temperature, then refrigerate for at least 4 hours.
