How to Make Creamy AGLIO E OLIO Southern Italy Style! 🇮🇹

I'm back to Calabria, Southern Italy, and taking a pause from street food to have fun in the kitchen. I wanted to make a video about aglio e olio because I truly believe this is a really difficult pasta to make. With just olive oil, garlic and fresh chillies, it's very easy to make a bland spicy pasta dish that's just excessively oily and lacking flavour and soul.
In this video I am gonna show a type of white pasta sauce recipe using the aglio e olio ingredients. It's a perfectly vegan recipe if you eat vegan, although at the end we add a special tuna tartare infused with bergamot flavour - feel free to skip this part if you don't fancy it! But make sure you pay attention and practice how to make the white creamy sauce of the pasta - you may be tempted to use powder or other diabolic stuff found at the supermarket, but really the secret is in the pasta water and the starch coming out when stirring the pasta - that's all you need for the ultimate creamy aglio e olio!
