Happy Camper Cornbread | Blackstone Griddles
Jeremy loves experimenting with campground cooking, and his latest creation is a hit—his Happy Camper Cornbread, baked to perfection in the Blackstone Leggero Pizza Oven. Packed with cheddar and ham, it’s crispy on the edges, buttery, and perfect for breakfast, a holiday side, or any meal. Ingredients
1 box Jiffy Cornbread Mix
â…“ cup whole milk
2 large eggs
6-7 slices of breakfast ham, diced
1 cup shredded cheddar cheese
½ stick salted butter
Directions
1. Heat your portable pizza oven to 500°F, leaving the pan inside to preheat.
2. In a mixing bowl, combine the Jiffy Cornbread Mix, milk, and eggs. Stir until smooth.
3. Dice the breakfast ham and fold it into the batter. Then, mix in the shredded cheddar cheese.
4. Once the oven reaches 500°F, remove the preheated pan carefully. Add the salted butter to the pan and swirl it around to coat the bottom evenly.
5. Pour the prepared batter into the buttered pan, spreading it evenly.
6. Carefully return the pan to the pizza oven and bake for 8-9 minutes, or until the cornbread is golden brown and set in the center.
7. Remove the pan carefully from the oven, let it cool slightly, and enjoy your delicious cornbread!
