COCKTAIL HEY HONEY!

This cocktail is a variation of the classic Bee’s Knees. I’ve replaced lemon and orange juice with freshly squeezed grapefruit juice. Rosemary adds a Mediterranean aroma. Maybe we can summon summer this way?

Recipe:
60ml-2oz GRAPEFRUIT GIN
30ml-1oz GRAPEFRUIT JUICE
15ml-½oz HONEY
3 leaves ROSEMARY

Stir all ingredients until the honey is dissolved. This step is very important, as the honey will become very firm, especially after adding the ice cubes, and the drink won’t get enough sweetness. In a professional bar, one should use honey syrup in the appropriate amount according to the mixing ratio instead. It saves a lot of time.
Shake with ice and fine strain into ice filled rocks glass.
Garnish with a grapefruit slice.
