Ingredients
2 medium-cooked chicken breasts shredded or chopped
2 ripe avocados pitted and diced
1-pound cooked rotini pasta or pasta of choice
1/2 cup chopped red onion
1/2 cup of red, green and yellow peppers 
1 cup halved cherry tomatoes
1/2 cup freshly chopped basil
Salt and pepper, to taste

Salad Dressing
1/2 cup white wine vinegar
1 tablespoon Italian seasoning
3/4 cup olive oil
Salt and pepper to taste 
2 tablespoons white sugar  (Substitute with honey or a sweetener of your choice)

Method
In a large bowl, add the salad ingredients, the shredded chicken, pasta, onion, avocado, peppers, cherry tomatoes and basil. 
In a jar, combine the ingredients for the dressing: vinegar, Italian seasoning, Olive oil, salt and pepper. 
Drizzle your chicken pasta salad with the dressing and toss gently until all the ingredients are combined. Serve the chicken pasta salad immediately, or chill for later.

Chef's Note: For a vegetarian version, substitute chicken with Tofu
