Makes four 3-4 mm thick bars

200 ml organic cacao/cocoa butter (food grade)
100 ml organic raw honey
100 ml organic cacao/cocoa powder

On a double boiler melt cacao butter https://a.co/d/eZArhoT
Stir in and melt honey until fully incorporated (buy at your local grocery store)
Slowly mix in cacao powder https://a.co/d/2V2374j

To temper (harden by crystallizing), pour chocolate into a sealable plastic bag and use a sous vide immersion circulator https://a.co/d/8z3141A (which has so many other great uses) and a 12 quart tank https://a.co/d/6j1FUQl. If necessary, use magnets https://a.co/d/2NmcJly to keep chocolate immersed.
122° for 15 minutes
82° for 15 minutes (drain off some hot water, add ice and cool water for fast cooling)
90° for 10 minutes. You may keep the chocolate immersed at this temperature if you don’t have enough molds.
