Chicken Cutlets are first flattened with a mallet to break down the protein & for even cooking. Next they are dredged in flour, whisked egg & seasoned panko breadcrumbs. Finally they are pan fried to perfection!

Ingredients:
2 Chicken Cutlets - about 230 grams
1/2 cup All purpose flour
1 egg whisked
1/2 cup Panko breadcrumbs
1 tbsp Italian seasoning mix - thyme, basil & oregano
Salt & Crushed black pepper to taste
3.5 tbsp cooking/veg. oil

Cooking Instructions:
Place chicken breast cutlets between shrink wrap/plastic film, one at a time
and pound flat with mallet as shown in video
Next season chicken cutlets with salt & crushed black pepper to taste
Also, season all purpose flour, whisked egg with salt & black pepper
Add Italian seasoning mix to panko breadcrumbs, mix well
Now dredge chicken cutlets in all purpose flour, egg & panko breadcrumbs to coat well evenly
Heat cooking oil in nonstick pan and pan fry chicken cutlets, one at a time, for 4 minutes/side on medium low setting
Once done, remove pan fried cutlets from pan and let cool/drain excess oil on wire-rack or paper towel
Wala! Your delicious Crispy Breaded Chicken Cutlets are ready!
Serve with Ranch dressing & arugula/cherry tomato salad! Bon Appetit!
