Chicken and Cabbage Soup is a healthy, hearty soup that’s both filling and nutritious! It’s made with tender pieces of chicken, lots of cabbage, and white beans simmering in a delicious broth. It’s so simple and satisfying!
Chicken and cabbage soup

Ingredients
1 onion, diced
4 garlic cloves, minced
3 Roma tomatoes, diced
1 1/4 lbs chicken breast or thighs, cut into thin slices
4 cups chicken broth
2 15 oz cans white beans, drained
1 small head of cabbage, shredded
Cooked rice for serving

Directions
Heat oil in a pan over medium heat, and sauté onions and garlic for 2 minutes.
Add tomatoes, cover and cook for 3 minutes. Uncover and mash the tomatoes with a spatula.
Add chicken, season with salt and pepper and cook for 2 minutes.
Add beans and chicken broth and bring to a boil.
Stir in cabbage and season well with salt and pepper. Lower the heat to medium low, cover and cook for 15 minutes. Serve soup with a scoop of rice if desired.
