CHICKEN PARM BAKED WRAPS

INGREDIENTS (makes 6 wraps)

Tomato Sauce (homemade or store bought, ingredients for mine below)
- 1 tsp olive oil
- 1 can chopped tomatoes (400g)
- 1 onion
- 1 clove garlic
- 1 tbsp tomato puree
- 1 tsp sugar
- Salt & pepper
- 1 tsp oregano

Chicken (ignore if using pre breaded)
- 5 Chicken breasts (to skip the next three ingredients, buy ready made breaded chicken breasts and cook them first)
- 2 eggs
- 3 tbsp flour
- 75-100g breadcrumbs
- salt & pepper

Wrap
- 6 tortillas
- 250g shredded mozzarella
- 250g sliced mozzarella
- 50g grated Parmesan

METHOD

Tomato sauce:
- To medium heat add the olive oil and the onion, fry for 5 mins
- Add the garlic and fry for a further minute
- Add the chopped tomatoes, tomato puree, sugar, salt & pepper and oregano and bring to the boil
- Once boiling bring down to a simmer and cook for 10 mins

Chicken: (skip this step if you have bought pre breaded chicken breasts and instead cook them according to instructions)
- Season the chicken with salt and pepper. To three plates add the egg, flour and the breadcrumbs and dip the breast in each of the three in order
- Add to the oven at Gas 5 for 20-25 mins until browned

Wraps
- Add 2 tbsp tomato sauce to each wrap along with some shredded mozzarella, sliced breaded chicken and Parmesan
- Spread another tbsp of sauce over the top of the wrap and top with sliced mozzarella, Parmesan, salt and pepper
- Bake in the oven or airfryer at 200 degrees Celsius for 10 minutes
- Top with basil and enjoy
