Another Recipe to make Scrumptious Pumpkin Cheesecake Pie with a homemade Vanilla Wafers Crust.

Pumpkin Cheesecake Pie
Ingredients:
8 oz Cream Cheese, soft
1/2 cup Brown Sugar
1/2 cup Sugar
2 Eggs, roomtemp
1 tsp Vanilla
1/4 tsp Salt
2 tsp Pumpkin Pie Spice
15 oz Pumpkin Puree
1/2 cup Whipping Cream

Crust:
1-1/2 cups Vanilla Wafer Crumbs
1/3 cup Sugar
6 tbsp Butter, melted
Pinch of Salt
1 tsp Cinnamon

Topping:
12 Vanilla Wafers
Whipped Topping
Cinnamon

Preheat Oven 350° F
Combine Vanilla Wafers Crumbs, Sugar, Cinnamon,
Salt and Butter.
Mix until evenly moist.
Pour in a 9" Pie Dish.
Spread out the Crumb Mixtures evenly.
Use Glass or small Measuring Cup to firmly press against the bottom and up the sides.
Pre bake for 6-8 Minutes.
Cool until ready to fill.

Cream together Cheese, Brown Sugar & Sugar.
Add Pumpkin Puree, Salt & Pumpkin Pie Spice.
Mix in Eggs, one at a time, Vanilla & Whipping Cream.
Fill Pie Crust with Mixture.
Bake 55-60 Minutes.
Open Oven door halfway and rest Pie inside for 15 Minutes.
Cool completely on Wire Rack.
Cover and refrigerate a few hours, best overnight.
Decorate with Vanilla Wafers, whipped Topping and a dusting of Cinnamon.
