Honey Wheat Berry Bread
Ingredients
1/2 cup hard red wheat berries
1 cup water
2 tbsp vegetable oil
3 tbsp honey
3/4 tsp salt
2 tbsp instant potato flakes
3/4 cup whole wheat flour
2 1/2 cups all-purpose flour
3 tbsp powdered milk
2 tsp white vinegar
2 tbsp vital wheat gluten
1 tbsp instant yeast
Directions
How-To cook the wheat berries.
Combine 1/2 cup rinsed wheat berries and 2 cups water in a saucepan and bring to a boil. Reduce heat to medium-low and simmer, covered, for about 1 1/2 to 2 hours, stirring occasionally, adding water if necessary. Cook until soft and some are opening. Drain any standing water before adding the cooked wheat berries.
Proof your yeast with 1 cup of warm water 110° F. and the honey. When you have bubbles add to your bread machine pan.
Now add the drained wheat berries to the bread machine pan.
Next add the rest of the liquid ingredients followed by the dry ingredients on top, the salt will be the last.
Set the bread machine to the dough setting. Watch the mixing cycle, if the dough looks too dry or too wet, add a few tbsp.'s of warm water or flour to get a good soft dough consistency.
When the dough cycle is complete, remove the dough from the bread machine pan onto a lightly floured surface. Shape the dough into a roll.
Put in a bread pan that has been sprayed with cooking oil spray. Let rise for about 40 minutes to 1 hour, or until about 1 1/2 inches above the pan.
Bake at 350° F on the middle rack of the oven for about 30 to 35 minutes.
The loaf should be a golden brown
