PIZZA CARNE SECA COM CHEDDAR METADE CALABRESA
MAKINGS
6 cups of wheat flour (about 840 g)
2 tablespoons of instant dry yeast (about 20 g)
2 tsp sugar
2 tsp salt
21/2 cups of warm water
1/4 cup of olive oil
wheat flour for dusting the countertop
olive oil to grease the bowl
PREPARATION
In a bowl, mix the yeast and sugar. Drizzle with the warm water and, with a spoon, mix well to dissolve. Leave at room temperature until foamy – about 5 minutes.
Meanwhile, in the bowl of your stand mixer, combine the flour with the salt and make a well in the center. Set aside a bowl or other large container and grease it with 2 tablespoons of olive oil – it has to have enough space for the dough to rise a lot.
Once foamy, pour the yeast mixture into the center of the bowl with flour. Add 1/4 cup of olive oil and mix, with a spatula, just to incorporate.
To knead the dough: fit the bowl to the mixer with the hook; Start
