Sweet & Festive Butternut Squash Boat
A wholesome, sweet treat perfect for any occasion.

Ingredients
(Serves 1)

1/2 medium butternut squash
1 medium apple (peeled, cored, and diced)
1/2 cup pomegranate seeds
50 grams pumpkin seeds (roasted or raw)
1/2 teaspoon ground cinnamon
50 ml maple syrup
1 teaspoon olive oil (for roasting)
Instructions
1. Roast the Butternut Squash
Preheat the oven to 180°C (350°F).
Cut the butternut squash in half lengthwise.
Brush the cut side with olive oil and place it cut side down on a baking tray.
Roast for 25-30 minutes, or until the squash is tender but holds its shape.
2. Prepare the Filling
In a mixing bowl, combine:
Diced apple
Pomegranate seeds
Pumpkin seeds
Ground cinnamon
Maple syrup
Stir well to coat all ingredients evenly.
3. Assemble and Bake
Flip the roasted butternut squash cut side up.
Scoop out the seeds and about 2-3 tablespoons of the flesh.
Mix the scooped-out flesh into the filling mixture.
Spoon the filling into the squash cavity.
Return to the oven and bake for an additional 10 minutes.
4. Serve and Garnish
Serve warm, drizzled with extra maple syrup if desired.
Garnish with additional pomegranate seeds and pumpkin seeds for a festive touch.
