[ MY BRISKET 🥩 RECIPE ]
Ingredients:
• Half brisket (approximately 6-8 lbs)
• Kosher salt
• Black pepper
• Garlic powder
• Onion powder
• Your favorite brisket rub
Instructions:
1. Prep the Brisket – Trim excess fat, leaving about ¼ inch of the fat cap. Season generously with kosher salt, black pepper, garlic powder, onion powder, and your favorite brisket rub. Let the brisket sit at room temperature for about 30 minutes.
2. Preheat the Smoker – Preheat your Traeger pellet smoker to 225°F.
3. Smoke the Brisket – Place the brisket on the smoker, fat side up. Smoke at 225°F for 8 hours or until the internal temperature reaches 160°F.
4. Wrap the Brisket – Remove the brisket and wrap it tightly in butcher paper (pink meat paper). Place it back on the smoker.
5. Continue Smoking – Smoke until the internal temperature reaches 203°F, approximately 2-4 more hours.
6. Rest the Brisket – Remove the wrapped brisket and wrap it in aluminum foil. Place it in a cooler, with a towel on the bottom and top, for 2-4 hours.
7. Slice and Serve – Unwrap the brisket and slice against the grain. Serve immediately and enjoy!
Notes:
• Use a meat thermometer to monitor the internal temperature accurately.
• The resting period in the cooler is crucial for the brisket to reabsorb its juices, ensuring a tender and flavorful result.
