Leftover turkey stewed with onions, garlic, tomato, spices and stock,. The end result; a soupy turkey & vegetable stew that will warm up your heart during the cold winter months. Ingredients & Recipe below:

Ingredients:
About 3 lbs cooked leftover turkey (dark meat) from Thanksgiving meal
2 tbsp cooking oil
2 bay leaves, 2 star anise
1 cinnamon stick
1 onion - chopped
3 cloves of garlic - minced
3 medium size potatoes - peeled, cut into small pieces
2 cup corn
1 tbsp cumin-coriander powder mix
1/4 tsp turmeric powder
1/2 tsp red chili powder
Salt & crushed black pepper to taste
3 cups vegetable stock
4 cups chicken stock
2 tbsp chopped parsley - optional

Cooking Instructions:
In a large nonstick pot add cooking oil
Once oil is hot add bay leaves, cinnamon stick & star anise
After 30 seconds add minced garlic, chopped onion. Saute for 2 minutes
Next add chopped onion, stir fry for 2 to 3 minutes
Add potatoes and stir fry for few minutes until they begin to brown
then add corn
Now toss in all the spices, salt & crushed black pepper
Mix well then add vegetable & chicken stocks
Cover with lid and simmer on low for 45 minutes to an hour until potatoes are fully cooked. Wala! Your Turkey Soupy Stew is ready!
Transfer to serving bowl and enjoy by itself or with pc of bread! Bon appetit!
