These samosas have a buttery shortcrust that sets them apart from ANY other samosas I've ever tried.

Ingredients:

Pastry:
450 g plain flour
110 g melted butter or ghee
1 tsp salt
150 ml cold water

Filling:
2 medium-sized potatoes, cut into 1/2 inch cubes
1 cup frozen peas
1 medium onion, finely chopped
1/2 tsp fenugreek seeds
1 tbs grated ginger
1/2 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
1 tsp kashmiri chilli powder
1.5 tbsp butter ghee (or vegetable oil)
1 tsp salt

Chutney:
400 g natural yoghurt
30 g fresh coriander
10 g fresh mint (leaves only)
1 garlic clove
2 green chillies
1 inch piece fresh ginger
1 tsp salt

Oil for deep-frying
