Fish Soup with Saffron and Tomatoes
Ingredients:
For the Soup:
2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, minced
1 celery stalk, chopped
1 carrot, diced

1 pound (450g) white fish fillets (such as cod, haddock, or tilapia), cut into bite-size pieces
Fresh herbs (such as parsley, dill, or tarragon) for garnish
Juice of 1 lemon
Optional Add-ins:
1 cup of cooked shrimp or mussels (for added seafood)
1 teaspoon of red pepper flakes (for a kick)
1/2 cup of white wine (for a richer flavor)
Instructions:
Prepare the Saffron:
In a small bowl, soak the saffron threads in 2 tablespoons of boiling water. Let it steep while you prepare the other ingredients. This helps to release its color and flavor.
Sauté the Aromatics:
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, celery, and diced carrot. Sauté for another 5 minutes until the vegetables begin to soften.
Add the Tomatoes:
Pour in the diced tomatoes (with their juices if using canned) and cook for about 5 minutes, letting the mixture reduce slightly while stirring occasionally.
Create the Broth:
Add the fish or seafood stock to the pot and bring to a gentle boil.
Stir in the saffron water along with the soaked threads, and season with salt and pepper. If using, add the white wine and red pepper flakes.
Simmer:
Reduce the heat and let the soup simmer for 10-15 minutes to allow the flavors to meld.
Cook the Fish:
Gently add the fish pieces (and any other seafood if desired) to the pot. Allow them to cook for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
Finish with Fresh Herbs:
Stir in the fresh herbs and lemon juice just before serving. Taste and adjust seasoning if necessary.
Serve:
Ladle the soup into bowls and garnish with additional fresh herbs or a drizzle of olive oil. Serve with crusty bread on the side for dipping.
