Shrimp in Cilantro Lime Cream Sauce - Keto, Quick, and Date Night Worthy

Good day and welcome back to the PharmCook kitchen!

Looking for something to make that's super tasty, seems elegant enough for a date night, doesn't take long to make, and can satisfy your need to maintain a keto lifestyle while also being flexible enough for those that enjoy carbs? Seems like a tall ask, but that's what we have for today's dinner!

Shrimp with a lime-cilantro cream sauce!

First, make the sauce.
Ingredients include:
1 shallot, fine dice
net of 1/2 cup fresh cilantro, fine dice
2 limes, zested and juiced
~ 26 ounces of heavy whipping cream
~ 1 tablespoon of salt
Butter

Saute the shallot in butter until translucent (~ 3 minutes)
Add cream and boost heat to high.
NOTE: you will need to keep stirring and scraping the sides of the pan to ensure that the sauce doesn't stick or burn or boil over. Be sure to adjust heat so that the sauce doesn't escape the pan but does boil and reduce.

Reduce sauce until it's reduced by half.
Add salt and stir.
Add lime juice and zest plus cilantro and stir.
Remove from heat.
Taste and adjust seasoning.

Shrimp
Dry outside of the shrimp.
Season with some salt, pepper and chipotle (optional)

In another pan, saute shrimp in some melted butter for ~ 30 seconds each side.
Add ~ 1/2 cup of cream sauce to pan and heat through for ~ 2 minutes.
Serve immediately topped with fresh cilantro.

If your date enjoys pasta with their shrimp, serve with some fresh pasta.
