Panko crusted salmon has tender, flaky salmon topped with buttery lemony, crispy breadcrumbs. This recipe is super easy to whip up for a weeknight meal, or fancy to enough to serve to company!

Panko Crusted Salmon

Ingredients
1 1/2 lbs salmon, divided into 4 portions
1/3 cup mayo
3 garlic cloves, minced
3/4 cups panko breadcrumbs
4 tablespoons melted butter
Zest of 1 lemon
Lemon wedges for serving

Directions
Preheat oven to 400°
Place salmon onto a baking sheet and season both sides well with salt and pepper.
Combine mayo with minced garlic and spread over salmon.
Combine Panko breadcrumbs with lemon zest, and melted butter, and season with salt and pepper. Spread on top of salmon.
Bake for 15-20 minutes.

Roasted broccoli

Ingredients
1 lb broccoli florets
Salt and pepper
Olive oil

Directions
Preheat oven to 400°. Place broccoli florets onto a baking sheet and season with salt and pepper. Drizzle over olive oil. Bake for 20 minutes.
