12 pound turkey

5 gallons of Peanut Oil

Brine:
5 leaves of fresh sage
3 Sprigs fresh Oregano
3 tbsp salt
1.5 tbsp pepper
3 tbsp garlic powder
3 tbsp onion powder
2 tbsp Cayenne

Procedure:
When it comes to frying turkey, safey should be your biggest concern. Buy your frozen turkey atleast a week before you fry your turkey. Let it thaw in your fridge for atleast 3 days. Then season your turkey with the dry brine uncovered in the fridge for 3 days.

Make sure to remove the heart and giblets from the turkey cavity and reserve your giblets for your gravy.

Heat your peanut oil to 350 degrees. Set your turkey inside your basket . Lower turkey into fryer slowly and watch for splashing of hot oil. Use rubber gloves for protection. Cook for about 37 minutes. It takes approximately 3 minutes per pound. Make sure to check the temperature of the breast and thigh with a thermometer. The internal temperature should be atleast 165 degrees fahreheit.
