Texas Hill Country Red Okra is a true gem for gardeners and cooks alike. It's an heirloom variety that's well-suited to the warm climates, particularly in southern Texas. The plants themselves are quite striking, often reaching heights of six feet or more, with sturdy stems and large, green leaves.
One of the standout features of this okra is its pods. The pods have a rich, red hue that becomes more pronounced when exposed to sunlight. They're best harvested when they're about 2 to 3 inches long, as they tend to be more tender and flavorful at this size. However, they can grow up to 6 inches and still be quite usable, especially for dishes like gumbo, where longer cooking times help to tenderize them.
In terms of flavor, Hill Country Red Okra has that classic okra taste which works wonderfully in a variety of dishes. It's excellent when fried, pickled, or added to soups and stews. The texture is firm, and when cooked properly, it can develop a delightful, almost crisp quality.
Growing this okra variety is quite rewarding. It prefers full sun and well-draining soil. Once the risk of frost has passed, you can sow the seeds directly into the garden. They typically germinate within a week or so, and you'll start seeing those first beautiful red-tinged pods in about 60 to 70 days. Regular harvesting encourages more pod production, so you'll have a steady supply throughout the growing season.
