Pizza TROMZONI. Homemade Italian Sausage. Pepperoni, Cheese, Cheese and more Cheese. Yes, PLEASE!!!
OMGosh..... this Tromzoni is DELICIOUS! Homemade Italian Sausage? Yes please. Super easy, tasty, and healthy. Yes, you can make homemade Italian sausage. You don't have to raise pigs or even grind pork, just buy a good quality ground pork and you can make an excellent sausage. This pizza Tromzoni is one of my top favorites, but honestly, I think I've said that about every version of Tromzoni I've made. Please forgive the poor camera placement, this is one of the first videos I recorded in our new home and it shows. Also, I know I need a microphone.... I'm working on it!!! Baguette Dough with ONE addition for Tromzoni
1.5 cups warm water
2 tsp instant dry yeast
2 tsp sugar
3.5-4 cups bread flour
2 tsp BAKING POWDER
1 Tbsp Avacado or Olive Oil
1 tsp salt
2 tsp diastatic malt powder
Add 2 tsp yeast and 2 tsp sugar to 1 ½ cups warm water and let stand 5 minutes. Add 3.5 cups flour, 1 Tbsp oil, 1 tsp salt, 2 tsp Baking Powder, and 2 tsp diastatic malt powder and hand mix with dough hook until roughly incorporated. Attached dough hook and mix on medium low speed for 5 minutes.
Pizza Sauce:
1 6 oz can Tomato Paste
2 Tbs Ketchup
2 cloves garlic, minced
¼ tsp each Oregano, Basil, & Salt
2 Tbs oil (Olive or Avacado)
Mix together all ingredients and let stand 1 hour, or refrigerate overnight.
Italian Sausage:
2# ground Pork
½ tsp Fennel, cracked
¼ tsp Caraway, cracked
¼ White Pepper
1 tsp Sugar
¼ tsp Hot Pepper Flakes, (more, if you like it spicy)
½ tsp ground Coriander
2 Tbs cold water
Mix together all ingredients, cover, and refrigerate for at least 1 hour and up to 2 days. Pan fry over medium high heat, breaking it into bite size pieces as it browns. Remove from pan and let cool. Use the same pan to saute 1 cup sliced or diced mushrooms until all of the water is cooked off and the mushrooms are slightly browned. Add 2 cloves minced garlic and saute another 3-4 mintues. Add the cooked mushrooms & garlic to the sausage and let cool.
Tromzoni Filling:
2# Italian Sausage, cooked (see above)
½ -1 cup sauted mushrooms & garlic (see above)
10 oz Pepperoni slices cut in half
½ lb sliced Ham cut into 1 inch pieces
½ cup diced green and red sweet peppers
½ cup diced sweet onions
8 oz grated Mozzarella
16 oz sliced Mozzarella cut into 1” strips
Egg wash: mix together 1 egg, 2 shakes of salt, and 1 Tbs cold water.
See video for assembly instructions. After assembled you can hold in the refrigerator for up to 3 hours before baking.
Bake at 375° for 25-30 minutes or until golden brown. Remove from baking sheet and let rest on a cooling rack for 5 minutes before cutting and serving.
