This drink is a twist on the classic Polish Martini. A Martini, to me, is always associated with wine flavors. That’s why I chose a wine-infused gin.

Since sour is famously cheerful, I went with sour apple. I used SŪPĀSAWĀ for that. Yes, the name gives it away. That stuff is super sour.

Recipe:
60ml-2oz WINE INFUSED GIN
30ml-1oz APPLE JUICE
15ml-1/2oz SŪPĀSAWĀ
7.5ml-1/4oz HONEY SYRUP 3:1

Stir all ingredients with ice. Chill and dilute. Strain into chilled Martini glass.
Express lemon zest while straining.
