TUSCAN SHRIMP | Super Easy Dinner or Appetizer!!

Tuscan Shrimp has seared shrimp, tomatoes and spinach in a rich creamy sauce! It requires very minimal effort but will definitely impress! It can also be served as an appetizer or a main dish!

Tuscan Shrimp

Ingredients
1 lb shrimp
2 tablespoons butter
4 garlic cloves, minced
10 oz cherry tomatoes, halved
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 cup heavy cream
3 cups baby spinach
Optional- toasted bread for serving

Directions
Season shrimp with salt and pepper.
Heat oil in a pan over medium high heat.
Sear shrimp on both sides until cooked through, about 1 1/2 minutes per side depending on the thickness. Remove and set aside.
Turn heat down to medium and melt butter. Add garlic and cook for 30 seconds.
Add tomatoes, season with salt and cook for 1 1/2 minutes.
Stir in oregano and paprika.
Add heavy cream and season with salt and pepper. Bring to boil and let cook for 1 minute.
Stir in spinach. Return shrimp back to the pan and remove from heat.
Serve with crusty bread or any carb or choice.
