Sea Trout and Jack Crevalle Taste Test

I convinced @upsidedownlady to do a taste test with a Jack Crevalle, a bait fish, by telling her I was smoking two tasty sea trout.

The Jack Crevalle was fine tasting, a little earthy but edible. Compared to the sea trout there was really no comparison. The sea trout is light, moist and flaked apart in smoky perfection. I can't say I'd ever keep another jack.
