Cajun Sausage & Green Beans

Cajun Sausage and Green Beans is a comforting dish made with bold flavors! Sausage and green beans are cooked until tender in a rich tomato gravy. Serve it with rice for a completely satisfying meal!

Cajun Sausage & Green Beans

12 oz-1 lb smoked sausage, sliced
1 onion, diced
5 garlic cloves, minced
4 tablespoons tomato paste
1 15 oz can diced tomatoes
2 cups chicken broth
1 tablespoon Cajun seasoning, or to taste
1 lb green beans, trimmed
Cooked rice for serving

Directions
Heat oil in a pan over medium high heat and brown sausages for 2 minutes. Add onions and garlic and cook for another 2 minutes.
Stir in tomato paste.
Add diced tomatoes and smash tomatoes with a spatula.
Add chicken broth, green beans and Cajun seasoning. Bring to a boil then lower heat to medium low. Let simmer uncovered for 25-30 minutes or until the green beans are tender.
Check seasonings and salt or more Cajun seasoning to taste.
Serve with rice.
