HowTo Homesteading canning potatoes how to can potatoes with less starch are canned potatoes mushy

How to can potatoes that have little to no starch.
I forgot to add the last tip! It's to fill your jars with clean, clear, boiling hot water instead of of the cooking liquid from the potatoes.

TIPS:
1) use smaller, younger potatoes
2) after scrubbing, but before cutting, store in cold water
3) cut into 1/2" cubes and store in cold water, change to fresh clean cold water at least twice, each time swishing the cubes around in the water
4) boil for 2 minutes
5) fill jars with fresh clean boiling water instead of using the cooking liquid
