These amounts are key, if you want to eat ice cream, the same day, at the perfect thick, consistency. Packing the ice cream is the term used, when starting the process of ripening the ice cream. The ice cream canister, still in the bucket, is packed with ice and rock salt; encasing the ice cream canister. Care is needed to make sure the canister is insulated. You also want to make sure the lid is well covered, so #Salt doesn’t get into the ice cream. Let the ice cream set, or ripen, 1:30 to 2 hours, for the perfect consistency.
