Saskatoon Berry Pie Recipe
Ingredients:
For the crust:
2 1/2 cups all-purpose flour
1 cup cold unsalted butter, cubed
1 tsp salt
1 tbsp sugar
6-8 tbsp ice water
For the filling:
4 cups fresh or frozen Saskatoon berries
3/4 cup granulated sugar
2 tbsp cornstarch (or tapioca starch for a more traditional version)
1 tbsp lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp butter, cut into small pieces
For the topping (optional):
1 egg, beaten (for egg wash)
1 tbsp coarse sugar (for sprinkling)
Instructions:
Make the pie crust:
In a large mixing bowl, combine flour, sugar, and salt.
Add the cold, cubed butter, and cut it into the flour using a pastry blender or two knives until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, stirring with a fork until the dough begins to hold together.
Form the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.
Prepare the filling:
In a large bowl, combine Saskatoon berries, sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Stir gently until the berries are well coated with the mixture.
Let the filling sit for about 15 minutes to allow the berries to release their juices.
Assemble the pie:
Preheat the oven to 425°F (220°C).
Roll out one of the chilled dough discs on a lightly floured surface into a 12-inch circle, and fit it into a 9-inch pie dish.
Pour the Saskatoon berry mixture into the pie shell, distributing it evenly.
Dot the filling with small pieces of butter.
Top the pie:
Roll out the second disc of dough and cover the pie with it, or cut it into strips to create a lattice top.
Crimp the edges to seal, and cut a few small slits in the top crust to allow steam to escape.
If desired, brush the top with the beaten egg and sprinkle with coarse sugar.
Bake the pie:
Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 15 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the crust is golden brown and the filling is bubbling.
If the crust is browning too quickly, cover the edges with foil.
Cool and serve:
Let the pie cool on a wire rack for at least 2 hours to allow the filling to set.
Serve the Saskatoon Berry Pie warm or at room temperature with whipped cream or vanilla ice cream.
This rare pie highlights the delicate flavor of Saskatoon berries, which are sweet with a hint of almond. The scarcity of the berries outside of certain regions makes this pie a true culinary gem!
