Here’s a quick and easy Blueberry Mousse recipe:

Ingredients:
1 cup fresh or frozen blueberries
1/4 cup sugar (adjust to taste)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup heavy whipping cream (cold)
1/2 cup Greek yogurt or plain yogurt (optional, for added creaminess)
Instructions:
Cook the blueberries:

In a small saucepan, combine the blueberries, sugar, and lemon juice.
Cook over medium heat until the blueberries start to burst and release their juices (about 5-7 minutes).
Mash lightly with a spoon, then remove from heat and allow to cool.
Blend the blueberry mixture:

Once cooled, blend the blueberry mixture in a blender or use an immersion blender until smooth.
If you want a smooth mousse, strain the mixture through a fine sieve to remove seeds and skins. Let it cool completely.
Whip the cream:
