You can reclaim the fat and make a #roux . Or use cornstarch, as a thickener; to make a clear #turkeygravy #gravy . Take the time to #Clarify the turkey stock. It makes for a nicer gravy. I double bag, my turkey stock, for the #Freezer. Defrost the turkey stock, Thanksgiving morning. Place the turkey stock in a Dutch oven.
