Ilocos Empanada Recipe
Ingredients;
Dough;
3 cups water
1 Tbsp annatto powder
Salt & pepper to taste
4 Tbsp oil
800g rice powder

Filling;
3 cups shredded papaya
1 cup monggo/mung beans(cook & remove the skin )
1 ½ Tbsp salt(to soak papaya)
½ tsp ground black pepper
6 pcs garlic longganisa
½ tsp seasoning (optional & any brand)
½ tsp salt mix with monggo & papaya mixture
Egg
Note; adjust seasoning according to your taste

Procedure;
For the dough;
In a pot over medium heat, add your water, salt, annatto & oil.
When the mixture starts to simmer, pour in your rice flour & stir with a wooden spoon.
Mix until the mixture thickens.
When it becomes a dough remove from heat and let it cool.
When completely cool, knead the dough until it becomes a smooth ball.
Cut into 6 or 7 circles, cover with cling wrap.
Set aside & rest for atleast 30 minutes.

For filling mixture;
In a pan, saute your garlic until light brown.
Add your Ilocos Longganisa, mash and saute, then season with salt and pepper.
Cook thoroughly.
Set aside when its done.
Prepare your vegetables and place them in a separate bowl.
Flatten the dough into circle shape.
Fill with your vegetables and longganisa, but make sure to leave a space in the middle.
Crack an egg in the center.
Fold the empanada in half and seal the edges by pinching it.
Or a plastic plate to cut the excess then press the edges.
Repeat for all empanadas until done.
Deep fry your empanadas, but make sure not to overcrowd them.
Remove empanadas from the pan when its crisps.
Serve with Ilocos vinegar.
