Preserving Pumpkins

I got my hands on 2 pumpkins and I wanted to make sure they got used, so they got turned into purée and roasted the seeds.
Yes, you sure can can pumpkin purée, but I knew I wouldn't have much so I froze mine instead.

Purée:
Cut pumpkin(s) in half
scoop out the inners (save the seeds)
roast at 350 for 45-60 mins
Once cooled, scoop out the pulp/flesh and blend until smooth (I had to add some water)

Seeds: wash and add some oil or butter and salt, roast at 250 for about 45-60mins.

Super easy to do, just takes some time out of your day.
