Egg and Avocado Stuffed Sweet Potato
Ingredients: 1 sweet potato, 2 eggs, avocado, salt, pepper.
Directions:
Bake a sweet potato at 400°F for 45 minutes until soft.
Cut the sweet potato open and scoop out some of the flesh to make room.
Crack an egg into the hollow, season, and bake for 10 minutes until the egg is set.
Top with mashed avocado before serving.
