Description:
Grilled Shish Taouk is a classic Middle Eastern dish, with juicy chicken skewers marinated in a zesty mixture of lemon, garlic, and sumac. The marinade is packed with vibrant flavors, and the grilling process gives the chicken a perfectly charred, smoky taste. Ingredients:
For the marinade:
1 kg (2.2 lbs) boneless, skinless chicken breast or thighs (cut into bite-sized chunks)
3 tablespoons olive oil
2 lemons (juiced)
4 garlic cloves (minced)
1 tablespoon sumac
1 tablespoon plain yogurt (optional for extra tenderness)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
½ teaspoon salt (or to taste)
For grilling and serving:
Wooden or metal skewers (soaked in water for 30 minutes if wooden)
Extra lemon wedges (for garnish)
Fresh parsley (for garnish)
Pita bread or flatbread (optional)
Grilled vegetables (optional)
Step-by-Step Instructions:
Step 1: Prepare the Marinade
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, sumac, plain yogurt, cumin, coriander, paprika, cinnamon, black pepper, and salt.
Make sure all ingredients are well-combined to create a flavorful marinade.
Step 2: Marinate the Chicken
Add the chicken chunks to the marinade and toss to coat all pieces evenly.
