Roasted Butternut Squash with Tahini
Ingredients:
1/2 butternut squash
100 grams dried apricots (chopped)
20 grams Manuka honey
100 grams tahini
10 grams ground cinnamon
20 grams pumpkin seeds
Olive oil (for brushing the butternut squash)
Instructions:
Preheat the Oven:

Preheat your oven to 180°C (350°F).
Prepare the Butternut Squash:

Cut the butternut squash in half and remove the seeds.
Brush the cut side of the squash with olive oil.
Place the squash cut side down on a baking tray and roast for 30-35 minutes, or until tender and golden.
Assemble and Bake:

Once the squash is roasted, remove the inside of the squash and place it in a separate bowl.
Add the cinnamon, honey, and tahini to the bowl. Mix well until fully combined.
Spoon the mixture back into the butternut squash.
Sprinkle the pumpkin seeds on top.
Serve warm and enjoy!
