Iberico Chorizo Pasta 2-in-1 Treat with Chorizo Sausage Side Dish by Gastro Guru
Amazingly delicious Linguine Pasta with Iberian Chorizo Sausage, tomato, parmesan cheese & fresh parsley. Garnished with fresh parsley, fried onion crumble & grated parmesan cheese. Served with a Chorizo sausage, onion & bell pepper side dish! Ingredients & Recipe below:
Ingredients For Iberico Chorizo Pasta:
200 grams linguine pasta
water to boil pasta - 8 quarts
1 pack uncooked 8 Oz. Iberico Chorizo sausage
(divided into two halves for pasta & side dish)
2 tbsp olive oil
1 tomato diced
2 ladle pasta water
1/2 cup chicken stock
2 tbsp fresh flat leaf parsley - chopped
Salt & crushed black pepper to taste
3 tbsp grated parmesan cheese - 2 tbsp for pasta , 1 tbsp for garnish
Ingredients For Iberico Chorizo Sausage Side Dish
1/2 (4 Oz.) Iberico Chorizo Sausage thinly sliced
1 tbsp olive oil
1 red onion - cut into thick slices/strips
1 red bell pepper - cut into thick slices/strips
Salt to taste
Cooking Instructions For Iberico Chorizo Pasta:
Bring water in a large pot to a rolling boil
Add salt and linguine pasta to it and cook for 9 minutes, until al dente
While pasta is cooking, lets prepare the sauce:
Cut half of the chorizo sausage into small pcs, set aside
Add 2 tbsp olive oil to a large preheated saucepan
Once oil is hot add chorizo sausage and cook it for about 3 minutes
Remove sausage pcs from pan, set aside
In the same pan add diced tomato and stir fry for 2 to 3 minutes
Next add pasta, mix well then add pasta water & chicken stock
Season with salt, then add back cooked chorizo sausage
Toss in 1 tbsp chopped parsley, mix well then turn off heat
Add 2 tbsp grated parmesan cheese & transfer to serving dish
Garnish with remaining grated parmesan cheese, parsley & fried onion crumble.
Cooking Instructions For Sausage Side Dish:
In the same pan that we prepared the pasta add 1 tbsp olive oil
Once oil is hot add remaining uncooked sliced chorizo that we set aside
Sear both sides of the sausage then add in onion & red bell pepper slices
Season with salt, stir fry for 2 to 3 minutes and or side dish is ready!
Wala! Both your pasta and sausage side dish are ready to be served.
