Ingredients:
1 lb ground turkey
1 tablespoon olive oil
1 onion (diced)
1 green bell pepper (diced)
1 red bell pepper (diced)
2 cloves garlic (minced)
1 can kidney beans (drained and rinsed)
1 can black beans (drained and rinsed)
1 can diced tomatoes (14.5 oz)
1 cup corn kernels (frozen or fresh)
1 cup BBQ sauce (your favorite variety)
1 cup chicken broth (or water)
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon smoked paprika (optional, for extra smokiness)
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper (optional, for heat)
Salt to taste
Toppings: sour cream, shredded cheese, green onions, cilantro
Instructions:
Cook the Turkey:

Heat olive oil in a large pot over medium heat.
Add ground turkey and cook until browned, breaking it into smaller pieces as it cooks. Drain any excess fat if necessary.
Sauté Vegetables:

Add diced onion, green bell pepper, red bell pepper, and minced garlic to the turkey.
