In this episode I sit down with Leighton Murphy, founder of Belly and Soul Wellness. We talk about her love of soil, nose to tail eating, and how Nature often has other plans for you.
Leighton describes herself as a mother first and foremost, a farmer, and an Ayurvedic wellness coach. "I'm passionate about the fusion of ancestral foods and Ayurveda because I think as women we have been deeply undernourished and over-restrict ourselves through toxic diet culture. Through living in the remote mountains of Patagonia I was able to surround myself with ancestral knowledge of nose-to-tail cooking. The weaving of those traditional practices with Ayurveda has brought so much nourishment and balance to my life, which is what I now share with my clients at Belly and Soul Wellness."
