Delicious Plantain Cheese Arepas Recipe

Delicious Recipe for Cheese stuffed Plantain Arepas, great as Appetizers with Pico de Gallo & spicy Cream Sauce, or for Lunch/Dinner with a Salad.

Plantain Cheese Arepas
Ingredients:
2 Plantains, ripe
8 oz Mozzarella Cheese
Salt
2 tbsp Butter, soft
1/2 tsp Turmeric
1/2 tsp Cumin
1 tsp Sugar
3/4 cup Corn Meal Mix
1 tsp Oil

Shred Mozzarella Cheese & divide in 8 portions.
Remove ends from Plantains and cut each in 4 Pieces.
Bring Water to a boil add a Pinch of Salt.
Cook Plantains until tender.
Remove Peel, add Butter and a Pinch of Salt, mash.
Add Turmeric, Cumin, Sugar & Corn Meal Mix, combine well.
Rest Mixture for 10 Minutes.
Divide Mixture in 8 equal Balls.
(Tip: wet your Hands, to prevent sticking)
Press each Ball in the middle, fill with Cheese.
Shape into Patties, covering Cheese.
Warm 1/2 tsp of Oil in med sized Skillet on med Heat.
Cook 4 Patties at a time.
6-7 Minutes on each side, until golden.
