Red Velvet Cupcake

Ingredients:

Dry:

• 225g all-purpose flour

• 15g cocoa powder

• 1/2 tsp baking soda

Wet:

• 2 eggs

• 200-250g powdered sugar

• 180ml buttermilk

• 1 tsp vanilla essence

• 2 tsp red food coloring

• 1 tsp lemon juice or vinegar

• 200g oil

Frosting:

• 200g cream cheese

• 3 tbsp icing sugar

• A squeeze of lemon juice

• 230g non-dairy whipping cream

Instructions:

1. Mix dry ingredients in a bowl.

2. Whisk wet ingredients until bubbly.

3. Combine dry with wet until smooth.

4. Bake at 160°C for 25 minutes.
5. Make frosting: beat cream cheese, lemon juice, and icing sugar. Add whipping cream and beat until thick.

6. Frost cupcakes once cool.
