Ingredients:
1 lb ground pork
8 oz noodles (ramen, udon, or rice noodles)
3 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
2 tbsp gochujang (Korean chili paste) or sriracha (adjust for heat)
1 tbsp honey
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp chili flakes (optional for extra heat)
2 cups bok choy or spinach, roughly chopped
1 carrot, julienned or thinly sliced
2 green onions, chopped
Fresh cilantro or basil for garnish (optional)
Lime wedges, for serving
Sesame seeds, for garnish
Instructions:
Cook the Noodles:

Cook the noodles according to package instructions. Drain and set aside.
Prepare the Sauce:

In a small bowl, mix the soy sauce, sesame oil, rice vinegar, gochujang (or sriracha), honey, and chili flakes (if using). Set aside.
Cook the Pork:

In a large skillet or wok, heat a little oil over medium-high heat.
Add the ground pork and cook until browned and slightly crispy, about 5-7 minutes.
Stir in the garlic and ginger, and cook for another minute until fragrant.
Add Vegetables:

Add the chopped bok choy (or spinach) and carrots to the skillet. Sauté for 2-3 minutes until the veggies are tender but still crisp.
Combine & Toss:

Pour the prepared sauce over the pork and vegetables, stirring to combine.
Add the cooked noodles to the skillet and toss everything together until the noodles are well coated and heated through.
Serve:

Divide the noodles into bowls. Top with chopped green onions, sesame seeds, and cilantro or basil.
Squeeze a lime wedge over each bowl for an extra pop of flavor.
