Salmon with Garlic Potatoes:

Ingredients:
4 salmon fillets (about 6 oz each)
1 lb baby potatoes (halved)
4 cloves garlic (minced)
1 tbsp olive oil
1 cup vegetable or chicken broth
1 tbsp fresh lemon juice
1 tsp paprika
1 tsp dried thyme (or fresh sprigs)
Salt and pepper (to taste)
Fresh parsley (for garnish)
Lemon wedges (optional, for serving)
Instructions:
1. Prepare the Potatoes:
Set your Instant Pot to Sauté mode and add olive oil.
Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant.
Add the halved baby potatoes and sauté for another 3-4 minutes, allowing them to slightly brown.
Season with a pinch of salt, pepper, and paprika.
Press Cancel to turn off the Sauté mode.
2. Add Liquid:
Pour in the vegetable or chicken broth.
Stir well to ensure the potatoes are coated with the broth and seasonings.
3. Layer the Salmon:
Place the salmon fillets on top of the potatoes.
Drizzle the lemon juice over the salmon.
Sprinkle thyme, more salt, and pepper on the salmon.
4. Pressure Cook:
Close the lid of the Instant Pot and set the valve to Sealing.
Select the Pressure Cook or Manual mode and set the timer to 4 minutes (on high pressure).
Once the cooking time is done, allow for a quick release by carefully turning the valve to Venting.
5. Serve:
Open the Instant Pot and check that the salmon is cooked through (should be tender and flaky).
Carefully remove the salmon and potatoes.
Garnish with fresh parsley and serve with lemon wedges.
Tips:
If you want crispy potatoes, you can place them under the broiler for a couple of minutes after removing them from the Instant Pot.
You can also add vegetables like green beans or asparagus on top of the salmon before cooking for a complete one-pot meal.
