**"Taste of Persia: Authentic Chelo Kebab Barg Recipe"**
Chelo Kebab Barg Recipe
Ingredients:
- Lamb or beef (preferably without fat) : 1 kg
- Onions : 2 large
- Saffron (dissolved) : 1 tablespoon
- Salt : to taste
- Black pepper : to taste
- Turmeric : 1 teaspoon
- Vegetable oil : for grilling
- Dried limes (limoo Omani) : 2 to 3 (optional)
Accompaniments:
- Basmati rice : 3 cups
- Tomato paste : 1 tablespoon
- Tomatoes (for grilling) : 4
- Fresh herbs : as needed (for serving)
Instructions:
1. Marinating the Meat :
- Cut the meat into cube-sized pieces.
- Grate the onions and mix them with the dissolved saffron, salt, black pepper, and turmeric.
- Add the meat pieces to the mixture and mix well to coat the meat evenly.
- Allow the meat to marinate in the refrigerator for at least 2 to 4 hours.
2. Cooking the Rice :
- Soak the rice in water with a bit of salt for 1 to 2 hours prior to cooking.
- Bring water to a boil in a pot, then add the soaked rice and let it boil for a few minutes.
- Drain the rice and steam it in a pot with some vegetable oil until fully cooked.
3. Grilling the Kebabs :
- Grease the skewers and thread the marinated meat pieces onto them.
- Place the skewers over hot coals or a grill. Baste the meat with some onion and tomato paste mixture every few minutes to enhance the flavor.
- Grill the tomatoes alongside the kebabs.
4. Serving :
- Serve the cooked rice on a platter, placing the grilled kebabs and tomatoes on top.
- Accompany with fresh herbs and dried limes.
