-we evolved to eat high fat carnivore diet
-livers make small amount of cholesterol
-not enough to make our brain & hormones & cover our
nerves in myelin sheaths
Cholesterol has lots of jobs in body
-comes Only from Animal Fat
The steroid hormone cascade:
-cholesterol; pregnenolone: left side:
-immune system & stress response; on right:
-sex steroids: androstenedione; testosterone; estrogens
Those eating plants only:
-won't be able to make enough HORMONES
Chronic stress, ultramarathons, will eat up a lot of hormones
-also a lot of your cholesterol needed for energy
-and cortisol, the hormone produced by stress
Eating flaxseeds, for example, estrogenic
prevents iodine absorption
Plant-only eaters, women especially,
won't get the hormones needed for
their cycle, for adolescence, & to
address stress
Have been high-fat carnivore for 9 years...
-currently 61, began carnivore at menopause
-morning: decaf coffee with lots of butter
-paddleboard for 7k, return, work
-lunch: steak
-snack on butter, beef jerky
-dinner: steak
Not every woman needs to be so restricted
-could eat fish, but don't feel as

Rank order of healthy foods:
1-ruminent animals [beef, lamb, bison, goat]

-problematic for those with autoimmune challenges
-Hashimotos; rheumatoid arthritis
Could trigger steroid hormone
immune response to stimulate reaction
-joint pain; eczema
