Creamy Chickpea Salad with Tahini Dressing| Quick & Healthy Meal

Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
½ zucchini, chopped
½ red bell pepper, chopped
½ yellow bell pepper, chopped
A small bunch of parsley, finely chopped
1 small cucumber, chopped
½ red onion, finely diced

Sauce:
Juice of 1 ½ lemons
3 tablespoons tahini
9 tablespoons low-fat yogurt
Celtic salt, to taste

Instructions:

Prepare the Vegetables:

Chop the zucchini, red and yellow peppers, cucumber, and parsley. Finely dice the red onion.

Mix the Salad:

In a large bowl, combine the chickpeas, zucchini, red pepper, yellow pepper, cucumber, parsley, and red onion.

Make the Sauce:

In a small bowl, whisk together the lemon juice, tahini, and low-fat yogurt until smooth. Season with Celtic salt to taste.

Pour the sauce over the chickpea and vegetable mixture. Stir everything together until the salad is evenly coated with the dressing and enjoy!
